The author of an incredibly geeky and informative blog, Ridiculous Fish (which incidentally inspired me to start my blog), has released an elegant hex-based file viewer/editor called Hex Fiend. I can scratch one more project off my growing list of personally needed but untackled tools. Other hex editors exist, but the speed and ease of this one prove its value within 30 seconds.
